  • 0.5 tsp Smoked Paprika regular paprika works as substitute
  • 0.25 tsp Salt adjust to taste
  • 3 tbsp Olive Oil or any neutral oil
  • 1 Tbsp Chipotle Pepper in Adobo use less for milder wraps
For the Wrap
  • 4 large Tortillas whole grain or gluten-free options if needed
  • 1 cup Uncooked Rice brown rice can be used for more fiber
  • 1 small Red Bell Pepper or substitute with any color pepper
  • 1 Jalapeño remove seeds for milder taste
  • 0.5 Red Onion sliced, or substitute with green onions
  • 3 Garlic Cloves minced
  • 0.75 cup Corn Kernels fresh, frozen, or canned
  • 1 cup Black Beans canned, drained and rinsed
  • 0.25 cup Cotija Cheese or feta/goat cheese as substitute
  • 0.33 cup Sour Cream Greek yogurt can be used as alternative
  • 1.5 Tbsp Honey or maple syrup for vegan option
  • 0.5-1 Tbsp Additional Chipotle Peppers adjust based on preference
  • 3 Tbsp Fresh Cilantro chopped, omit if not preferred
  • 1-2 Tbsp Water to thin the sauce if necessary

Method
 

Cooking Instructions
  1. Marinate the Chicken: Dice the chicken breasts, mix with marinade ingredients and let sit for at least 15 minutes.
  2. Cook the Rice: Prepare rice according to package instructions. Set aside when fluffy.
  3. Prepare the Sauce: Blend sour cream, additional lime juice, honey, and cilantro; adjust consistency with water.
  4. Sauté the Chicken: Cook marinated chicken in a skillet for 12-15 minutes until fully cooked.
  5. Cook the Vegetables: Sauté red bell pepper, red onion, jalapeño, and garlic for about 8 minutes.
  6. Combine Chicken and Veggies: Return chicken to skillet and mix until heated through.
  7. Assemble the Wraps: Warm tortillas, layer with rice, chicken mixture, black beans, corn, cheese, and sauce.
  8. Wrap It Up: Fold in sides of tortillas and roll tightly; secure with a toothpick if needed.
