Ingredients

For the Dough
  • 1 lb Lean Ground Beef (5% fat) Ground turkey or chicken can be used for a lighter option.
  • 1 cup Low-Fat Mozzarella Cheese Consider part-skim mozzarella or dairy-free cheese for lactose-free options.
For the Flavoring
  • 3 oz Pepperoni Turkey pepperoni is a leaner alternative.
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder Can be swapped for fresh minced garlic (1 clove for each teaspoon).
  • 1 teaspoon Smoked Paprika Replace with regular paprika for less smoke.
  • 1 teaspoon Dried Oregano Italian seasoning blend makes a great substitute.
For the Filling
  • 1 cup Crushed Tomatoes Tomato sauce can be used instead.
  • 2 tablespoons Tomato Paste No substitutions suggested.
  • 2 tablespoons Flat-Leaf Parsley Optional garnish, can be omitted or replaced with dried parsley.

Equipment

  • Large Skillet
  • Baking tray
  • Small bowl
  • measuring spoons

Method

Step-by-Step Instructions
  1. Prepare Spice Mixture: In a small bowl, combine onion powder, garlic powder, smoked paprika, and dried oregano. Mix thoroughly until the spices are evenly blended.
  2. Cook Beef: Heat a large skillet over medium-high heat and add a drizzle of oil. Once the oil is shimmering, add the lean ground beef. Cook for about 5 minutes, stirring occasionally, until the meat is fully browned. Drain excess fat if needed.
  3. Add Pepperoni & Spices: Mix in the chopped pepperoni and prepared spice mixture into the skillet. Continue to cook for an additional 2 minutes.
  4. Create Filling: Stir in the crushed tomatoes and tomato paste. Allow it to simmer on low heat for 2-3 minutes until the filling has thickened slightly.
  5. Assemble Rolls: Lay wraps flat and distribute about 3-4 tablespoons of the beef mixture across each wrap. Sprinkle mozzarella on top and roll tightly, sealing edges with a little water.
  6. Bake: Preheat oven to 200°C (400°F). Place rolls seam-side down on a lined baking tray and spray with cooking oil. Bake for 8-10 minutes until crisp and golden brown.
