Ingredients
  

For the Chicken
  • 1 pound Boneless, Skinless Chicken Thighs Juicy and flavorful
  • 2 tablespoons Jerk Seasoning Or substitute with Cajun seasoning
  • 1 tablespoon Olive Oil Or use vegetable oil
For the Pineapple
  • 1 whole Ripe Pineapple Fresh is ideal
For the Coleslaw
  • 4 cups Coleslaw Mix (Cabbage and Carrots) Pre-packaged mixes are a time-saver
  • 1 cup Mayonnaise Greek yogurt is a lower-calorie substitute
  • 2 tablespoons Apple Cider Vinegar You can use lemon juice as a substitute
  • 1 tablespoon Honey Optional; can substitute with maple syrup
  • to taste Salt and Pepper Essential for seasoning
For Assembly
  • 4 whole Burger Buns Whole grain buns for extra fiber
  • to taste Fresh Cilantro or Parsley Optional but recommended for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine boneless, skinless chicken thighs with jerk seasoning and olive oil. Marinate for at least 15 minutes.
Preheat the Grill
  1. Preheat your grill to medium heat, about 350°F (175°C). This takes about 10-15 minutes.
Grill the Pineapple
  1. Slice the ripe pineapple into thick rings and grill for 3-4 minutes per side until caramelized.
Grill the Chicken
  1. Place the marinated chicken thighs on the grill and cook for 6-7 minutes per side until they reach an internal temperature of 165°F (75°C).
Prepare the Coleslaw
  1. Mix coleslaw mix with mayonnaise, apple cider vinegar, honey, and salt and pepper in a large bowl.
Assemble the Sandwich
  1. On each burger bun, place grilled chicken, top with grilled pineapple slices, and add a scoop of coleslaw.
Garnish and Serve
  1. Sprinkle chopped cilantro or parsley over the sandwiches and serve immediately.

Notes

Store leftover sandwiches in an airtight container for up to 2 days. For freezing, wrap grilled chicken and pineapple tightly and they will last up to 2 months.
