Chickpea Salad Instructions
- Rinse and drain the chickpeas under cold running water. Allow to drain well.
- Chop the cherry tomatoes, cucumber, and red onion to uniform sizes and place them in a bowl.
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Whisk until emulsified.
- Combine the chickpeas and chopped vegetables, drizzle the dressing over, and toss gently.
- Finely chop parsley and sprinkle over the salad, tossing gently once more.
- Chill the salad covered in the fridge for 10-15 minutes before serving.
