  • 1 can canned chickpeas rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber chopped into bite-sized pieces
  • 1/4 cup red onion finely diced
  • 1/4 cup parsley finely chopped
For the Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 clove garlic minced

Method
 

Chickpea Salad Instructions
  1. Rinse and drain the chickpeas under cold running water. Allow to drain well.
  2. Chop the cherry tomatoes, cucumber, and red onion to uniform sizes and place them in a bowl.
  3. In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Whisk until emulsified.
  4. Combine the chickpeas and chopped vegetables, drizzle the dressing over, and toss gently.
  5. Finely chop parsley and sprinkle over the salad, tossing gently once more.
  6. Chill the salad covered in the fridge for 10-15 minutes before serving.
