Steps to Make
- Cover a baking tray with wax or parchment paper.
- Combine pumpkin purée, homemade pumpkin spice, salt, and liquid stevia in a bowl. Mix until smooth (about 2 minutes).
- Gradually stir in oat flour until a thick dough forms (about 2-3 minutes).
- Roll the mixture into bite-sized spheres (about 1 inch) and place on the prepared tray.
- Melt dark chocolate in a microwave-safe bowl in 20-second intervals, stirring until smooth (1-2 minutes).
- Dip each pumpkin sphere into melted chocolate, allowing excess to drip off before placing back on the tray.
- Sprinkle flaky sea salt on top of the truffles while the chocolate is still wet.
- Refrigerate for at least 30 minutes or until chocolate is set.
