- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface to about 1/8-inch thickness.
- Slice the rolled pastry into 8 equal squares.
- In a bowl, whisk together the egg and milk to create the egg wash.
- Place a slice of ham and a portion of cheese on the center of each pastry square. Optionally, spread Dijon mustard on the pastry.
- Sprinkle salt, pepper, and fresh herbs over the filling.
- Layer a second pastry square on top of the filled one and seal the edges with a fork.
- Brush the top of each pastry stack with the egg wash.
- Place the stacks on the parchment-lined baking sheet and bake for 20-25 minutes until golden brown.
- Let the stacks cool slightly on a wire rack before serving warm.
