- Preheat your grill or grill pan over medium-high heat, approximately 375°F to 400°F.
- In a large bowl, combine sliced zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, then season with salt and pepper.
- Carefully place the vegetable mixture on the preheated grill. Grill for about 5–7 minutes until tender and charred.
- In a medium bowl, whisk together Greek yogurt, lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper to make the Zesty Herb Sauce.
- Spread approximately 1/4 cup of hummus in the center of a whole wheat tortilla.
- Layer on the grilled vegetables and a handful of fresh spinach or arugula.
- Drizzle the Zesty Herb Sauce over the filling.
- Carefully roll the tortilla tightly, folding in the sides, and slice in half diagonally.
- Repeat the assembly for remaining wraps and serve immediately with extra Zesty Herb Sauce.
