Ingredients
  

For the Wrap
  • 1 medium Zucchini sliced into rounds
  • 1 medium Red Bell Pepper substitute with orange or yellow if preferred
  • 1 medium Yellow Bell Pepper can be omitted if desired
  • 1 medium Red Onion substitute with green onions if desired
  • 1 cup Cherry Tomatoes replace with diced Roma tomatoes if unavailable
  • 2 tablespoons Olive Oil extra virgin recommended
  • to taste Salt
  • to taste Pepper
  • 2 pieces Whole Wheat Tortillas gluten-free available
  • 1/2 cup Hummus store-bought or homemade
  • 2 cups Spinach or Arugula any leafy green
For the Zesty Herb Sauce
  • 1/2 cup Greek Yogurt substitute with dairy-free yogurt if desired
  • 2 tablespoons Lemon Juice fresh lemon preferred
  • 1 tablespoon Lemon Zest fresh lemon preferred
  • 2 tablespoons Fresh Dill
  • 2 tablespoons Fresh Parsley
  • 1 clove Garlic minced, or use roasted garlic
  • to taste Salt
  • to taste Pepper

Method
 

Instructions
  1. Preheat your grill or grill pan over medium-high heat, approximately 375°F to 400°F.
  2. In a large bowl, combine sliced zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, then season with salt and pepper.
  3. Carefully place the vegetable mixture on the preheated grill. Grill for about 5–7 minutes until tender and charred.
  4. In a medium bowl, whisk together Greek yogurt, lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper to make the Zesty Herb Sauce.
  5. Spread approximately 1/4 cup of hummus in the center of a whole wheat tortilla.
  6. Layer on the grilled vegetables and a handful of fresh spinach or arugula.
  7. Drizzle the Zesty Herb Sauce over the filling.
  8. Carefully roll the tortilla tightly, folding in the sides, and slice in half diagonally.
  9. Repeat the assembly for remaining wraps and serve immediately with extra Zesty Herb Sauce.
