Ingredients
  

For the Chicken
  • 1 pound Chicken Breast Substitute with chicken thighs for added flavor
For the Tzatziki
  • 1 cup Cucumber Grated and excess moisture removed
  • 1 cup Greek Yogurt Consider using non-fat alternatives
  • 2 tablespoons Fresh Dill Or substitute with dried dill
  • 2 cloves Garlic Minced
  • to taste Salt
  • to taste Pepper
For the Grain Base
  • 1 cup Quinoa Or substitute with couscous, brown rice, or farro
For the Vegetables
  • 2 cups Fresh Vegetables Roasted peppers, artichokes, or bell peppers can be used

Method
 

Chicken Preparation
  1. Marinate the Chicken: Combine olive oil, lemon juice, minced garlic, and salt and pepper in a bowl. Add chicken and coat well. Marinate for 30 minutes to 4 hours.
  2. Cook the Chicken: Preheat grill or skillet over medium-high heat. Cook chicken for 6-8 minutes per side until cooked through.
Tzatziki Preparation
  1. Prepare the Tzatziki Sauce: Grate cucumber and remove excess moisture. Mix with Greek yogurt, dill, garlic, salt, and pepper. Refrigerate.
Final Assembly
  1. Cook the Grain Base: Rinse quinoa and combine with 2 parts water in a saucepan. Boil, then simmer for 15 minutes.
  2. Assemble the Bowls: Layer quinoa in bowls, top with sliced chicken, tzatziki sauce, and fresh vegetables.
Serving
  1. Serve warm, drizzled with lemon juice and sprinkled with herbs.
