Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together the sifted all-purpose flour and granulated sugar until well combined.
  3. In a separate bowl, blend the ricotta cheese, large egg, vanilla extract, and lemon zest until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.

  6. Roll out the dough to about ¼ inch thickness and cut into rectangles.

  8. Take a rectangle of dough, place filling in the center, fold and pinch edges to seal.
  9. Place filled cookies on baking sheets, and bake for 15-18 minutes.
  10. Cool on wire racks for about 10 minutes and dust with powdered sugar.
