Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Distribute the tomatoes, bell pepper, onion, garlic, and feta in ramekins or a baking dish. Drizzle olive oil over the mixture.
  3. Mix oregano, sea salt, thyme, black pepper, and red pepper flakes in a small bowl, then sprinkle over the vegetables and feta.
  4. Place the dishes on a baking sheet and bake for 25 minutes until vegetables are tender and feta is bubbling.
  5. Stir the mixture and fold in baby spinach until wilted.
  6. Create wells in the mixture and crack an egg into each well.
  7. Return to the oven and bake for another 10 minutes until egg whites are set and yolks are still runny.
  8. Garnish with fresh herbs and serve with crusty bread or pita.
