  • 1 large Onion diced

  • 1 tablespoon Ginger minced or powdered
  • 4 cups Chicken Broth low-sodium optional
  • 1 cup Tomatoes diced, canned or fresh
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 2 medium Carrots sliced
  • 1 large Bell Peppers sliced
For Serving
  • 2 cups Rice jasmine or basmati
  • 1 loaf Crusty bread for dipping

Step-by-Step Instructions
  1. Prepare Ingredients: Chop the chicken, dice the onion, mince the garlic and ginger, and slice the carrots and bell peppers.
  2. Brown the Chicken: In a large pot, heat oil and sauté the chicken for 5-7 minutes until browned. Set aside.
  3. Sauté Aromatics: In the same pot, sauté the onion for 3-4 minutes, then add garlic and ginger, stirring for another 1-2 minutes.
  4. Combine Ingredients: Add chicken back to the pot with peanut butter, chicken broth, and tomatoes. Stir to combine.
  5. Simmer: Bring to a boil, reduce heat, cover, and simmer for 30-40 minutes until chicken is cooked and sauce thickens.
  6. Adjust Seasoning: Taste and adjust flavors with salt, pepper, or spices.
  7. Serve: Ladle the stew into bowls and serve warm with rice or bread.
