Preparation Steps
- Wash the cucumber thoroughly under cool running water and slice it into thin rounds, approximately 1/8-inch thick.
- Rinse the strawberries under cool water, hull them, and slice into 1/4-inch thick pieces.
- In a medium bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
- In a large mixing bowl, combine the cucumber and strawberry slices. Drizzle the dressing over and gently toss the ingredients.
- Slice fresh mint leaves into thin ribbons and sprinkle over the salad, tossing one last time.
