- In a large mixing bowl, combine the baby spinach, finely chopped spring onions, parsley, dried oregano, and dried thyme. Crumble the Greek feta into the bowl and season with sea salt and freshly cracked black pepper. Mash the mixture together using a fork until the feta breaks down and the spinach wilts gently, about 3 minutes.
- In a shallow bowl, whisk together the three eggs, water, and a pinch of salt and pepper until well combined. Set the bowl aside.
- Dip each rice paper sheet into the egg wash for about 5–10 seconds, then lay it flat and sprinkle a bit of grated Parmesan in the center. Add a generous spoonful of the spinach-feta filling, then roll tightly into a tube and shape into a spiral.
- Preheat your air fryer to 220°C (428°F). Place the spirals in the basket and cook for about 12–15 minutes, turning halfway through.
- Once cooked, drizzle fresh lemon juice over the crispy Rice Paper Spanakopita and serve warm, optionally alongside tzatziki for dipping.
