Step-by-Step Instructions
  1. Peel the ripe Saba bananas and mash them in a mixing bowl until smooth but still slightly chunky.
  2. In a separate bowl, whisk together flour, cornstarch, sugar, salt, and baking powder until there are no lumps.
  3. Gradually add water or milk to the dry mixture while mixing gently until it is thick but still has some lumps.
  4. Fold the mashed bananas into the batter until well combined.
  5. Heat about 1/2 inch of cooking oil in a frying pan over medium heat until it reaches around 350°F (180°C).
  6. Scoop some batter with a ladle and carefully drop it into the hot oil, frying for 2-3 minutes on each side until golden brown.
  7. Remove the fritters from the oil and let them drain on paper towels, then dredge them in sugar while still warm.
  8. Serve the Maruya warm, either alone or with a scoop of vanilla ice cream.
