- Peel the ripe Saba bananas and mash them in a mixing bowl until smooth but still slightly chunky.
- In a separate bowl, whisk together flour, cornstarch, sugar, salt, and baking powder until there are no lumps.
- Gradually add water or milk to the dry mixture while mixing gently until it is thick but still has some lumps.
- Fold the mashed bananas into the batter until well combined.
- Heat about 1/2 inch of cooking oil in a frying pan over medium heat until it reaches around 350°F (180°C).
- Scoop some batter with a ladle and carefully drop it into the hot oil, frying for 2-3 minutes on each side until golden brown.
- Remove the fritters from the oil and let them drain on paper towels, then dredge them in sugar while still warm.
- Serve the Maruya warm, either alone or with a scoop of vanilla ice cream.
