  • 8 oz Lump Crab Meat Imitation crab can be used
  • 2 scallions Green Onions Chopped
  • 1 clove Minced Garlic Fresh for enhanced aroma
  • 1 tsp Grated Ginger Fresh or dried

For the Dough
  • 1 cup Shredded Mozzarella Cheese No substitutes recommended
  • 1 cup Almond Flour Coconut flour can be substituted with adjustments
  • 1 large Egg Acts as a binder

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, combine cream cheese, lump crab meat, chopped green onions, minced garlic, grated ginger, salt, and pepper.
  3. In a microwave-safe bowl, combine the shredded mozzarella cheese, almond flour, and a bit of cream cheese. Microwave in increments until fully melted and smooth.
  4. Add an egg to the melted cheese mixture. Blend well and knead until smooth and pliable.
  5. Roll the dough out into a thin rectangle, about 1/8-inch thick, and cut into 18 equal squares.
  6. Place about 1 tablespoon of filling in the center of each dough square, fold to form a triangle, and pinch edges to seal.
  7. Bake the sealed rangoons on a lined baking sheet for 12 to 15 minutes until golden brown.
  8. Allow to cool slightly before serving.
