Step-by-Step Instructions
  1. Wash and scrub the potatoes under cold water. Peel if desired, then cut into 1-1.5 inch wedges.
  2. Soak the potato pieces in cold water for 30–60 minutes, drain and pat dry.
  3. Preheat your oven to 400°F (200°C).
  4. In a bowl, whisk lemon juice, olive oil, garlic, oregano, salt, and black pepper. Toss the potatoes in the marinade.
  5. Spread marinated potatoes on a lined baking sheet in a single layer.
  6. Roast for 20–25 minutes, then flip the potatoes and roast until golden brown.
  7. Add broth around the potatoes and continue roasting for 25–35 minutes until fork-tender.
  8. Increase oven temperature to 425°F (220°C) for the last 10–15 minutes for extra crispiness.
  9. Let the potatoes rest for 5-10 minutes before serving, garnished with parsley or oregano.
