Cooking Instructions
- Begin by mixing 2 teaspoons of salt into 1 cup of water until dissolved. Clean and devein your raw shrimp, then place them in the brine for 10 to 15 minutes.
- In a shallow bowl, whisk together 1 egg and 2 tablespoons of water until smooth. Gradually add 40 grams of all-purpose flour until you have a lump-free batter.
- Dip each brined shrimp into the batter, then transfer to a plate with shredded coconut, gently pressing to adhere.
- In a deep pot, heat oil to 360°F (180°C). Use a thermometer or test with a small amount of batter.
- Fry coated shrimp in batches for 2 to 3 minutes until golden brown, flipping halfway. Drain on paper towels.
- Serve immediately while hot and crispy, paired with a spicy orange dipping sauce or your favorite condiment.
