Ingredients
  

For the Vinaigrette
  • 1/2 cup Caramel Sauce Adjust the amount for desired sweetness.
  • 1/4 cup Apple Cider
  • 2 tablespoons Apple Cider Vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • 1/2 teaspoon Kosher Salt
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Ground Cinnamon
For the Slaw
  • 2 cups Gala Apples Cut into matchsticks.
  • 2 cups Fuji Apples Cut into matchsticks.
  • 2 cups Bartlett Pears Cut into matchsticks.
  • 1/2 cup Dried Cranberries
  • 1/2 cup Golden Raisins

Method
 

Vinaigrette Preparation
  1. In a medium bowl or jar, combine the caramel sauce, apple cider, apple cider vinegar, and extra virgin olive oil. Whisk or shake vigorously until fully emulsified, about 1-2 minutes.
  2. Add kosher salt, black pepper, and ground cinnamon to the vinaigrette, ensuring it’s well mixed.
Fruit Preparation
  1. Wash the Gala and Fuji apples, along with the Bartlett pears. Cut them into matchstick-sized pieces and place into a large mixing bowl.
Slaw Assembly
  1. Add dried cranberries and golden raisins to the bowl of prepared matchstick apples and pears.
  2. Drizzle ¼ cup of the prepared vinaigrette over the fruit mixture and toss gently.
Chilling and Serving
  1. Cover the bowl tightly with plastic wrap or a lid and refrigerate for about 1 hour.
  2. After chilling, give the slaw a gentle toss before serving.
