Preparation
  1. In a food processor, combine mint leaves, Greek yogurt, garlic, lemon juice, apple cider vinegar, and honey. Drizzle in olive oil, with a pinch of salt and pepper. Pulse until smooth, about 30 seconds.
  2. Core and slice the apples thinly or chop into bite-sized pieces. Slice cucumbers into thin rounds.
  3. In a large salad bowl, mix the sliced apples and cucumbers together. Drizzle the dressing over and toss gently.
  4. Serve immediately, garnished with mint if desired.
