Step-by-Step Instructions
  1. In a large pot over medium-high heat, add olive oil and butter. Sauté diced onion for about 5 minutes until translucent.
  2. Stir in minced garlic, tomato paste, and chopped sun-dried tomatoes. Add Italian seasoning, dried oregano, and crushed red pepper flakes. Cook for about 1 minute.
  3. Pour in dry white wine and bring to a gentle bubble. Let cook for 1-2 minutes, stirring frequently.
  4. Add chicken broth and bring to a boil. Stir in uncooked pasta, reduce heat, cover, and simmer for about 10 minutes.
  5. Stir in heavy whipping cream and shredded rotisserie chicken, heating through for 4-5 minutes.
  6. Off the heat, fold in fresh baby spinach and Parmesan cheese. Adjust seasoning with salt and pepper before serving.
