  • 1 can sweet corn drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can Rotel tomatoes
  • 1 cup diced bell pepper any color
  • 1 cup shredded cheddar cheese
  • 3 cups Fritos add just before serving
For the Dressing
  • 1 cup sour cream can substitute Greek yogurt
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cumin

Preparation
  1. In a medium bowl, whisk together 1 cup of sour cream, 2 tablespoons of olive oil, salt, pepper, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, and ½ teaspoon of cumin until the mixture is smooth and creamy.
  2. In a large mixing bowl, add 1 can of drained and rinsed sweet corn, 1 can of drained black beans, 1 can of Rotel tomatoes, and 1 cup of diced bell pepper. Gently mix the ingredients together until evenly combined.
  3. Pour the prepared dressing over the vegetable mixture, ensuring it evenly coats all the ingredients. Stir the salad until every bite is drizzled with that zesty creaminess.
  4. Just before serving, fold in 3 cups of Fritos to the salad mixture, ensuring the chips remain intact and crunchy.
  5. Optionally, garnish your salad with additional Fritos, a sprinkle of shredded cheddar cheese, or fresh cilantro. Serve chilled or at room temperature.
