- In a medium bowl, whisk together 1 cup of sour cream, 2 tablespoons of olive oil, salt, pepper, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, and ½ teaspoon of cumin until the mixture is smooth and creamy.
- In a large mixing bowl, add 1 can of drained and rinsed sweet corn, 1 can of drained black beans, 1 can of Rotel tomatoes, and 1 cup of diced bell pepper. Gently mix the ingredients together until evenly combined.
- Pour the prepared dressing over the vegetable mixture, ensuring it evenly coats all the ingredients. Stir the salad until every bite is drizzled with that zesty creaminess.
- Just before serving, fold in 3 cups of Fritos to the salad mixture, ensuring the chips remain intact and crunchy.
- Optionally, garnish your salad with additional Fritos, a sprinkle of shredded cheddar cheese, or fresh cilantro. Serve chilled or at room temperature.
