Ingredients
  

For the Pasta and Sauce
  • 8 ounces Cavatappi Macaroni or any pasta of your choice
  • 1 cup Heavy Cream substitute with coconut milk for dairy-free
  • 4 tablespoons Flour to thicken the sauce
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Pepper preferably freshly ground
For the Caramelized Onions
  • 2 large Onions yellow or sweet onions preferred
  • 2 tablespoons Olive Oil for sautéing
  • 1 cup Beef Broth or vegetable broth for vegetarian option
  • 1 tablespoon Sugar optional, to help caramelize
For the Topping
  • 1 baguette Baguette for homemade breadcrumbs
  • 1/2 cup Parmesan Cheese or nutritional yeast for vegan
  • 2 tablespoons Fresh Parsley for garnish
  • 1 teaspoon Smoked Paprika Powder to taste
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1/4 teaspoon Nutmeg use sparingly
  • 1 teaspoon Oregano or thyme as substitute

Method
 

Caramelizing Onions & Preparing Sauce
  1. Thinly slice the onions. Heat olive oil in a large skillet over medium heat. Add the onions and cook for 30-40 minutes until golden brown.
  2. In a separate saucepan, melt butter. Whisk in flour for 1 minute, then gradually add heavy cream, stirring until thickened. Mix in ⅔ of caramelized onions.
Cooking Pasta & Combining
  1. Boil salted water in a large pot, add pasta, and cook for 6-7 minutes until just shy of al dente. Drain and reserve pasta water.
  2. Combine drained pasta in the saucepan with béchamel sauce, mixing to coat evenly. Adjust consistency with reserved pasta water.
Baking & Serving
  1. Preheat oven to 350°F (175°C). Pour the pasta mixture into a greased baking dish, topping with remaining caramelized onions and breadcrumbs.
  2. Bake uncovered for 10-15 minutes until the top is golden brown. Let cool briefly, garnish with parsley, and serve hot.
