Caramelizing Onions & Preparing Sauce
- Thinly slice the onions. Heat olive oil in a large skillet over medium heat. Add the onions and cook for 30-40 minutes until golden brown.
- In a separate saucepan, melt butter. Whisk in flour for 1 minute, then gradually add heavy cream, stirring until thickened. Mix in ⅔ of caramelized onions.
Cooking Pasta & Combining
- Boil salted water in a large pot, add pasta, and cook for 6-7 minutes until just shy of al dente. Drain and reserve pasta water.
- Combine drained pasta in the saucepan with béchamel sauce, mixing to coat evenly. Adjust consistency with reserved pasta water.
Baking & Serving
- Preheat oven to 350°F (175°C). Pour the pasta mixture into a greased baking dish, topping with remaining caramelized onions and breadcrumbs.
- Bake uncovered for 10-15 minutes until the top is golden brown. Let cool briefly, garnish with parsley, and serve hot.
