- Season the chicken breasts with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until golden brown and cooked through. Slice and set aside.
- Bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes until al dente. Reserve about a cup of pasta water before draining.
- In the same skillet, melt butter over medium heat. Sauté minced garlic until fragrant. Add Cajun seasoning and smoked paprika, stirring. Pour in heavy cream and chicken broth, simmer until thickened.
- Stir in Parmesan cheese until melted. Toss drained pasta and sliced chicken in the sauce. Adjust the consistency with reserved pasta water as needed. Garnish with parsley before serving.
