Step‑by‑Step Instructions for Butter Beans with Leeks
  1. In a medium saucepan over low heat, gently melt 2 tablespoons of butter until completely melted.
  2. Add sliced leeks, minced garlic, thyme, and rosemary. Cook on medium-low for about 8-10 minutes until leeks are soft.
  3. Pour in 1/2 cup of white wine, scraping the bottom of the pan. Let it simmer for 2-3 minutes.
  4. Add 2 cans of drained butter beans and 1 cup of vegetable stock. Stir to coat the beans.
  5. Sprinkle in 1 cup of sharp cheddar cheese, stirring until melted and creamy.
  6. Grate fresh pecorino cheese on top, then add lemon juice and zest, stirring gently.
  7. Serve warm, garnished with parsley and paired with crispy bread.
