  • 12-15 pieces potstickers store-bought or homemade
  • 6 cups broth chicken or vegetable, low-sodium preferred
  • 2 tablespoons fresh ginger grated
  • 3 cloves garlic minced
  • 1 can coconut milk
  • 2-3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon lime juice freshly squeezed
For the Garnish
  • 1/4 cup cilantro chopped, optional
  • 2 stalks green onions sliced

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add 3 minced garlic cloves and 2 tablespoons of freshly grated ginger. Sauté for 2-3 minutes until fragrant.
  2. Pour in 6 cups of chicken or vegetable broth and 1 can of coconut milk, stirring to combine. Increase the heat to bring to a gentle simmer.
  3. Gently add 12-15 potstickers into the simmering broth. Cook for 5-7 minutes until heated through.
  4. Add 2-3 tablespoons of soy sauce to the broth, tasting and adjusting as needed. Stir and let simmer for another minute.
  5. Remove from heat and stir in the juice of 1 lime.
  6. Ladle the soup into bowls, garnishing with chopped cilantro and sliced green onions before serving.
