Method
 

Step-by-Step Instructions
  1. In a medium pot, heat coconut oil. Add minced garlic and grated ginger, sauté for 3–4 minutes.
  2. Add chicken broth, coconut milk, lime juice, and fish sauce. Stir and let simmer for 2–3 minutes.
  3. Add chicken thighs, cover, and simmer for 20 minutes, flipping halfway.
  4. Rinse rice under cold water, cook per package instructions.
  5. Once chicken is cooked, slice it. Layer rice in bowls, top with chicken and broth.
  6. Garnish with green onions, cilantro, and curry powder. Serve with lime wedges.
