For the Soup Base
  • 1 lb Mild Fish such as salmon
  • 1 cup White Rice or brown rice for more fiber
  • 4 cups Fish Stock or vegetable stock for vegetarian option
  • 1 tbsp Fresh Ginger finely chopped
For the Freshness

  • 1/4 cup Fresh Herbs such as cilantro and mint
  • 1 lime Lime juiced
For Flavor Depth
  • 2 tbsp Fish Sauce or soy sauce for vegetarian version

Equipment

  • Large pot

Method

Step-by-Step Instructions
  1. Finely chop the fresh ginger and scallions, then rinse the white rice under cold running water until the water runs clear.
  2. In a large pot, combine the rinsed white rice with the fish stock over medium heat and bring to a boil. Reduce heat and let it simmer uncovered for about 30 minutes.
  3. Once the rice has cooked down, gently fold in the fish pieces and the chopped ginger. Simmer for an additional 10 to 15 minutes until the fish is tender.
  4. If desired, blend a portion of the soup using an immersion blender for a smoother texture, leaving some chunks for balance.
  5. Ladle the soup into bowls, garnishing with scallions, fresh herbs, and a squeeze of lime. Adjust thickness with additional stock or water if needed.
