  • 12 oz Fresh Lo Mein Noodles or dried egg noodles, cooked al dente
For the Sauce
  • 3 tbsp Light Soy Sauce
  • 1 tbsp Dark Soy Sauce optional
  • 1 tbsp Oyster Sauce optional but recommended
  • 1 tbsp Granulated Sugar
  • 1/2 tsp White Pepper adjust to taste
  • 1 tbsp Cornstarch
  • 2 tbsp Water for slurry
  • 1 tbsp Sesame Oil added at the end
For the Aromatics
  • 1 tbsp Vegetable Oil or peanut oil
  • 2 cloves Garlic minced
  • 1 inch Fresh Ginger grated or minced
  • 2 stalks Green Onions separate greens from whites

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add fresh lo mein noodles and cook for 2-3 minutes, or until tender but still al dente. Drain and toss with vegetable oil.
  2. In a small bowl, whisk together light soy sauce, dark soy sauce, oyster sauce, granulated sugar, white pepper, and cornstarch mixed with a splash of water. Set aside.
  3. Heat a wok or large skillet over medium-high heat, add vegetable oil, and stir-fry minced garlic, grated ginger, and white parts of green onions for about 30 seconds.
  4. Add the prepared noodles followed by the sauce mixture. Toss together for 2-3 minutes until well-coated and glossy.
  5. Stir in the green parts of the green onions and toss for another minute.
  6. Transfer to plates and serve immediately, optionally garnishing with sesame seeds or steamed veggies.
