Ingredients
  

For the Casserole
  • 1 lb Ground Beef or ground turkey for a leaner option
  • 1 tbsp Olive Oil or any cooking oil
  • 1 medium Onion chopped; shallots or leeks can be used
  • 2 cloves Garlic minced; or garlic powder
  • 4 medium Potatoes peeled and thinly sliced; sweet potatoes can be used
  • 2 cups Cheddar Cheese shredded; try dairy-free cheese for vegan
  • 0.5 cups Parmesan Cheese grated; omit for vegan
  • 1 tbsp Dried Italian Seasoning or replace with oregano or basil
  • 1 tsp Paprika smoked paprika can be used
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 cup Beef Broth or water; vegetable broth for vegetarian
  • 0.5 cups Milk optional; skip for dairy-free
  • 0.25 cups Fresh Parsley chopped; optional garnish

Method
 

Preparation and Cooking
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a large skillet, heat 1 tablespoon of olive oil and brown the ground beef for about 5–7 minutes. Drain fat and transfer to the baking dish.
  3. Sauté chopped onion and minced garlic in the same skillet for 3–4 minutes until translucent. Spread over the beef.
  4. Layer peeled and sliced potatoes evenly over the mixture in the baking dish, then season with salt, pepper, seasoning, and paprika.
  5. Add shredded cheddar and grated parmesan cheese on top, then pour beef broth around the edges.
  6. Cover with aluminum foil and bake for 30 minutes, then remove foil and bake for another 15–20 minutes until golden brown.
  7. Garnish with freshly chopped parsley and serve hot.
