- Begin by heating 2 tablespoons of olive oil in a large pot over medium heat. Add 1 finely chopped yellow onion and cook for about 5-6 minutes until translucent and soft.
- Introduce 2 minced garlic cloves and sauté for an additional 30 seconds until fragrant.
- Stir in 2 tablespoons of tomato paste and cook for 1 minute while stirring continuously.
- Pour in 2 cans of fire-roasted diced tomatoes along with 3 cups of broth. Add 1 teaspoon of sugar or honey, 1 teaspoon of salt, 0.5 teaspoon of black pepper, and optional spices.
- Bring the soup to a gentle boil, then reduce to a simmer. Leave uncovered for 15-20 minutes, stirring occasionally.
- Remove from heat and use an immersion blender to puree until smooth.
