Ingredients
  

For the Noodles
  • 8 oz Bean Thread Noodles Substitute with vermicelli noodles if preferred.
For the Vegetables
  • 2 cups Cucumbers Use Persian cucumbers or swap for shredded carrots/bell peppers.
  • 1 cup Scallions Can alternate with pickled shallots or red onions.
For the Herbs
  • 1 cup Cilantro Can replace with Thai basil or chives.
  • 1/4 cup Mint Substitute with basil if desired.
For the Dressing
  • 3 tbsp Miso Paste Use white or yellow miso for best results.
  • 2 tbsp Tamari Can swap with soy sauce or coconut aminos.
  • 2 tbsp Rice Vinegar Champagne vinegar or lime juice can be used.
  • 1 tbsp Maple Syrup Agave nectar is a great alternative.
  • 2 tbsp Sesame Oil Toasted sesame oil can enhance flavor.
For the Protein
  • 1 cup Edamame Use thawed frozen edamame for convenience.

Method
 

Soaking and Mixing
  1. Boil water in a pot. Soak bean thread noodles for 3 to 5 minutes until softened. Drain and cool in a bowl.
  2. Chop cucumbers, scallions, cilantro, and mint. Add to the bowl with cooled noodles.
Making the Dressing
  1. Combine miso paste, tamari, rice vinegar, maple syrup, sesame oil in a blender. Blend until smooth.
  2. Adjust sweetness or tanginess if needed.
Combining Everything
  1. Pour dressing over the noodles and vegetables. Toss well to coat evenly.
  2. Divide into bowls and top with edamame, additional cucumber, avocado, and sesame seeds.
