For the Steak Marinade
  • 2 lbs flank steak can substitute with skirt steak or sirloin
  • 2 limes fresh lime juice use fresh for best flavor
  • 1/4 cup olive oil avocado oil can be used as an alternative
  • 1/4 cup fresh cilantro, chopped can substitute with parsley
  • 4 cloves garlic, minced fresh is preferred for better flavor
  • 1 tsp ground cumin
  • 1 tsp chili powder can substitute with paprika or cayenne
  • 1 tsp salt sea salt or kosher salt recommended
  • 1/2 tsp black pepper freshly cracked is ideal
For the Bowls
  • 2 cups cooked rice white or brown, quinoa or cauliflower rice can be alternatives
  • 1 can black beans canned, rinsed, and drained
  • 1 cup corn fresh, frozen or canned
  • 1 cup cherry tomatoes, halved
  • 1 avocado sliced can use guacamole as a substitute
  • 1/2 cup red onion, diced white or green onions are milder alternatives
  • 1/2 cup feta cheese, crumbled optional, cotija can be a substitute
  • 1/4 cup extra cilantro for garnish
  • 2 limes wedges for serving

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the fresh lime juice, olive oil, chopped cilantro, minced garlic, ground cumin, chili powder, salt, and black pepper until well combined. Submerge the steak in the mixture, cover and refrigerate for at least 30 minutes (ideally 2-4 hours).
  2. Cook rice according to package instructions (typically 15-20 minutes). Heat black beans in a small saucepan for about 5 minutes.
  3. For fresh corn, boil water and cook corn for 4-6 minutes. For frozen corn, follow package directions.
  4. Preheat grill or grill pan to medium-high heat. Grill steak for 4-5 minutes on each side until medium-rare. Let rest for 5-10 minutes before slicing.
  5. In individual bowls, start with rice as a base, then add beans, corn, tomatoes, avocado, diced red onion, and sliced steak.
  6. Garnish with feta cheese, extra cilantro, and serve with lime wedges on the side.
