  • 2 medium Zucchini Adds moisture and lightness; can be replaced with yellow squash for a vibrant color.
  • 2 medium Bell Peppers Infuses sweetness and bright hues into the dish; any color peppers work well.
  • 1 medium Onion Offers aromatic depth and sweetness when sautéed; use green onions for a milder flavor.
  • 2 cups Spinach A kaleidoscope of nutrition and color; frozen spinach can be used (just thaw and drain).
  • 1 cup Cheddar Cheese Delivers a creamy, savory flavor; try vegan cheese for a dairy-free casserole.
  • 3 large Eggs Binds the casserole ingredients together; consider flax eggs for a vegan alternative.
  • to taste Herbs/Spices (Salt, Pepper, Italian Seasoning) Elevate the flavor profile; adjust according to your taste preferences.
For Optional Toppings
  • 1 cup Breadcrumbs Sprinkling on top adds a delightful crunch; seasoned panko breadcrumbs work wonderfully.
  • 1/4 cup Fresh Herbs Chopped parsley or basil make for a refreshing garnish, enhancing the dish’s presentation.

Equipment

  • Large Skillet
  • Mixing Bowl
  • Baking Dish

Method

Steps
  1. Begin by chopping the cauliflower, zucchini, bell peppers, and onion into bite-sized pieces. In a large skillet, heat a splash of olive oil over medium heat. Add the chopped veggies and sauté for about 5–7 minutes until they're softened and aromatic, stirring occasionally to prevent sticking.
  2. In a spacious mixing bowl, combine the sautéed vegetables with fresh spinach, shredded cheddar cheese, and eggs. Season the mixture generously with salt, pepper, and Italian seasoning to taste.
  3. Grease a 9x13-inch baking dish with a little olive oil or cooking spray to prevent sticking. Carefully pour the vegetable and cheese mixture into the dish, spreading it evenly across the bottom.
  4. Preheat your oven to 375°F (190°C). Once heated, place the casserole in the oven and bake for 30–35 minutes.
  5. After baking, remove the casserole from the oven and let it cool for about 10 minutes. Once slightly cooled, use a sharp knife to cut your portions. Serve warm.
