- In a large mixing bowl, beat 1/2 cup of softened unsalted butter and 1 package of softened cream cheese until smooth and fluffy, about 2-3 minutes.
- Add 1 large egg and 1 teaspoon of pure vanilla extract into the mixture. Mix until thoroughly combined, about 1-2 minutes.
- Gradually add 1 box of yellow cake mix, mixing on low speed until the dough becomes thick and sticky, about 2-3 minutes.
- Cover the mixing bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Once chilled, scoop the dough and roll into small balls, then roll in powdered sugar.
- Arrange the dough balls on a lined baking sheet, placing them about 2 inches apart. Bake for 10-12 minutes until edges are set and centers remain soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Optionally, sprinkle with red and green sprinkles while warm.
