For the Salad
  • 1 can Chickpeas drained and rinsed
  • 1 Avocado diced, ripe
  • 1 Cucumber chopped, firm
  • 1 Red Onion finely chopped, soaked in cold water
  • 1 handful Fresh Parsley chopped
For the Dressing
  • 3 tablespoons Olive Oil high-quality
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 tablespoon Honey or substitute with maple syrup
  • Salt & Pepper to taste
  • Garlic Powder or fresh minced garlic

Method
 

Preparation
  1. In a large mixing bowl, combine the chickpeas, diced avocado, chopped cucumber, finely chopped red onion, and chopped parsley. Mix gently to preserve avocado's texture.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper. Add garlic powder or minced garlic if desired.
  3. Drizzle the dressing over the salad and gently toss to coat all ingredients without mashing the avocado.
  4. Cover and let the salad rest for 10 minutes at room temperature to allow flavors to meld.
  5. After resting, give the salad a final gentle toss before serving it chilled or at room temperature.
