Method
 

Baking Instructions
  1. Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk the flour, cocoa powder, baking soda, and salt until combined.
  3. In a large mixing bowl, cream together the softened butter and sugar on medium speed for 2-3 minutes until light and fluffy.
  4. Add the egg, vanilla extract, and red food coloring to the creamed mixture and mix on low speed until well combined.
  5. Gradually add the dry ingredients to the wet mixture, gently stirring until a soft dough forms.
  6. Use a medium cookie scoop to portion out the dough onto the prepared baking sheet, flattening each ball slightly.
  7. Bake for 10-11 minutes until edges are set and centers are soft. Cool on the baking sheet for 5 minutes.
  8. While cooling, prepare the frosting by beating cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
  9. Once cookies are cool, frost each generously with the cream cheese frosting and add sprinkles if desired.
