- Preheat your oven to 400°F (200°C).
- In a stand mixer, add 1 cup of salted butter, 3/4 cup of dark brown sugar, and 1/2 cup of granulated sugar. Mix for 2 minutes until light and fluffy.
- Add 2 room-temperature eggs and 1 tablespoon of vanilla bean paste (or 2 teaspoons of vanilla extract). Beat for about 30 seconds until well combined.
- Gradually mix in 1 1/2 cups of all-purpose flour, 1 1/4 cups of cake flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1 teaspoon of salt until combined.
- Gently fold in 2 cups of sweetened shredded coconut, 2 cups of chocolate chips, and 1/2 cup of caramel bits using a spatula.
- Using a large scoop, portion out 8 big balls of dough, around 6 ounces each, onto parchment-lined cookie sheets.
- Bake for 12-14 minutes until golden, keeping the centers soft and slightly underbaked.
- Let the cookies cool on the baking sheets for at least 30 minutes before transferring to a wire rack to cool completely.
