Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a stand mixer, combine the softened unsalted butter with the brown and granulated sugars. Beat until light and fluffy.
  3. Add in the room temperature egg, egg yolk, and vanilla extract, mixing until smooth.
  4. Gradually mix in the baking powder, baking soda, salt, cornstarch, and all-purpose flour until just combined.
  5. Using a large cookie scoop, portion out dough into 3-tablespoon balls on the prepared baking sheets.
  6. In a small bowl, mix flour, brown sugar, cinnamon, and salt for the crumb topping. Add soft butter and mix until crumbly.
  7. Generously spoon the crumb topping into the divots of your cookie dough.
  8. Bake for 9-12 minutes until edges are golden brown. Cool completely on a wire rack.
  9. Whisk together powdered sugar, a bit of cinnamon, and milk for the glaze. Drizzle over cooled cookies.
