Dough Preparation
- In a mixing bowl, combine 1 cup of warm water, 1 tablespoon of sugar, and 2 teaspoons of active dry yeast. Let sit for about 5 minutes until frothy.
- Add 4 cups of all-purpose flour and 1 teaspoon of salt to the yeast mixture. Mix until a rough dough forms, then knead for about 10 minutes until smooth and elastic.
- Place the kneaded dough into a greased bowl, cover with a towel, and let it rise for 30-45 minutes until doubled in size.
Baking Preparation
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- In a separate bowl, mix 8 ounces of cubed fresh mozzarella, 2 tablespoons of chopped fresh rosemary, and ¼ cup of grated Parmesan cheese.
- Divide the risen dough into 8 equal pieces, roll into ropes, spoon the filling into each, fold over, and seal tightly.
- In a saucepan, bring 10 cups of water to a boil and stir in ⅔ cup of baking soda. Boil each pretzel for about 30 seconds.
- Place pretzels on the baking sheet, sprinkle with coarse salt and additional Parmesan if desired, and bake for 15-20 minutes until golden brown.
- Allow to cool briefly on a wire rack before serving.
