Dough Preparation
  1. In a mixing bowl, combine 1 cup of warm water, 1 tablespoon of sugar, and 2 teaspoons of active dry yeast. Let sit for about 5 minutes until frothy.
  2. Add 4 cups of all-purpose flour and 1 teaspoon of salt to the yeast mixture. Mix until a rough dough forms, then knead for about 10 minutes until smooth and elastic.
  3. Place the kneaded dough into a greased bowl, cover with a towel, and let it rise for 30-45 minutes until doubled in size.
Baking Preparation
  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a separate bowl, mix 8 ounces of cubed fresh mozzarella, 2 tablespoons of chopped fresh rosemary, and ¼ cup of grated Parmesan cheese.
  3. Divide the risen dough into 8 equal pieces, roll into ropes, spoon the filling into each, fold over, and seal tightly.
  4. In a saucepan, bring 10 cups of water to a boil and stir in ⅔ cup of baking soda. Boil each pretzel for about 30 seconds.
  5. Place pretzels on the baking sheet, sprinkle with coarse salt and additional Parmesan if desired, and bake for 15-20 minutes until golden brown.
  6. Allow to cool briefly on a wire rack before serving.
