Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Cut chicken breasts into bite-sized pieces and toss with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  2. Spread chicken onto a parchment-lined baking sheet and bake for 15-20 minutes until golden brown and cooked through.
  3. Heat buffalo sauce in a small saucepan over low heat, stirring occasionally.
  4. Once chicken is baked, transfer to a mixing bowl and toss with warmed buffalo sauce.
  5. In serving bowls, add a layer of cooked rice, followed by buffalo chicken, then corn and black beans.
