- In a medium saucepan, combine water and sugar over medium heat. Stir until sugar dissolves, about 5 minutes.
- Add frozen ginger cubes and fresh sage leaves, then remove from heat and let sit for 5-10 minutes.
- Strain the syrup into a jar using a fine mesh sieve, discarding solids and let cool.
- Fill tall glass with ice, pour in bourbon, pear juice, ginger ale, and add ginger sage syrup.
- Garnish with pear slices and a sprig of sage. Serve immediately.
