- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together 1 cup of butter and 1 cup of sugar until light and fluffy, about 3-4 minutes.
- Add 2 eggs one at a time, mixing well after each followed by 2 teaspoons of vanilla extract.
- In another bowl, whisk 2 cups of flour, 2 teaspoons of baking powder, and a pinch of salt then combine with the wet mixture.
- Drop rounded dough onto the baking sheet with about 2 inches apart.
- Bake for 15-20 minutes until lightly golden, then cool on the sheet for 5 minutes before transferring.
- Beat 1 cup of heavy cream, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form for the filling.
- Fill half the cookies with the cream filling and top with the remaining cookies.
- Melt 1 cup of chocolate chips with 2 tablespoons of butter in the microwave until smooth for the glaze.
- Dip the tops of each cookie in the chocolate glaze and let them set before serving.
