- Rinse 1 cup of fresh blueberries under cold water to remove any dirt or residue, then drain and pat dry.
- Slice 1 or 2 ripe peaches into wedges or thin slices. Combine with the rinsed blueberries in a large mixing bowl.
- Crumble ½ cup of feta cheese over the fruit mixture.
- Wash and dry 2 cups of mixed arugula. Roughly chop and gently fold into the bowl with the fruit and feta mixture.
- Chop a small red onion finely and sprinkle over the salad, followed by ¼ cup of chopped walnuts.
- In a separate bowl, whisk together 2 tablespoons of honey, 3 tablespoons of balsamic vinegar, and 3 tablespoons of olive oil. Add black pepper and salt to taste.
- Drizzle the dressing evenly over the salad mixture, then gently toss everything together.
