Method
 

Step-by-Step Instructions
  1. Rinse 1 cup of fresh blueberries under cold water to remove any dirt or residue, then drain and pat dry.
  2. Slice 1 or 2 ripe peaches into wedges or thin slices. Combine with the rinsed blueberries in a large mixing bowl.
  3. Crumble ½ cup of feta cheese over the fruit mixture.
  4. Wash and dry 2 cups of mixed arugula. Roughly chop and gently fold into the bowl with the fruit and feta mixture.
  5. Chop a small red onion finely and sprinkle over the salad, followed by ¼ cup of chopped walnuts.
  6. In a separate bowl, whisk together 2 tablespoons of honey, 3 tablespoons of balsamic vinegar, and 3 tablespoons of olive oil. Add black pepper and salt to taste.
  7. Drizzle the dressing evenly over the salad mixture, then gently toss everything together.
  8. Serve immediately or chill for up to an hour in the refrigerator.
