Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and spray a 9x13-inch baking dish with cooking spray.
  2. In a skillet, heat vegetable oil over medium heat, add diced onion, and sauté for about 5 minutes until translucent. Stir in chili powder and cumin for another 30 seconds.
  3. Gradually whisk in chicken stock, followed by tomato sauce and minced garlic. Simmer for 5 minutes on low heat.
  4. In another skillet, cook ground beef until browned, season with salt and pepper, then stir in green chiles and black beans.
  5. Pour ½ cup of enchilada sauce into the baking dish and layer tortillas dipped in sauce.
  6. Spread half of the beef mixture over tortillas and top with 1 cup of cheese. Repeat with another layer of tortillas and remaining beef.
  7. Top with 2 cups of cheese and bake uncovered for 20 minutes until bubbly and golden brown. Let cool slightly before serving.
