  • 1 medium Red Onion Substitute with green onions if preferred.
  • 1/4 cup Cilantro Swap for parsley if cilantro's taste isn't for you.

  • Mixing Bowl
  • Spatula
  • Cutting Board

Method

Step-by-Step Instructions
  1. Preheat your oven to 200°F (95°C) to keep the quesadillas warm after cooking. Mix shredded chicken with warmed BBQ sauce in a medium bowl until fully coated.
  2. Take one tortilla and layer half of the Monterey Jack cheese, followed by BBQ chicken mixture and then top with remaining cheese.
  3. Heat a non-stick skillet over medium heat (350°F or 175°C) and lay the tortilla in the skillet. Cook for about 3-5 minutes until golden brown and crispy.
  4. Flip the quesadilla carefully and cook for another 3-5 minutes until the cheese melts and the second side is golden.
  5. Remove from skillet, cool slightly, slice into wedges, and serve hot with extra BBQ sauce.
