Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, spraying it lightly with cooking spray.
- In a large mixing bowl, cream the unsalted butter and light brown sugar together on medium speed for about 2 minutes until fluffy.
- Mix in the egg, vanilla extract, and salt until well combined. Scrape down the sides of the bowl.
- Gradually add the all-purpose flour on low speed just until incorporated. The batter should be thick and scoopable.
- Gently fold in the mashed bananas and chocolate chips with a spatula, ensuring not to overmix.
- Pour the batter into the prepared baking dish and spread it evenly. Sprinkle extra chocolate chips on top if desired.
- Bake in the preheated oven for 33-37 minutes or until golden brown and a toothpick inserted comes out clean.
- Cool the bars in the pan on a wire rack for 10-15 minutes before lifting them out and cooling completely. Cut into 16 squares.
