- Preheat your oven to 375°F (190°C). Gather your ingredients as the oven preheats.
- Roll out puff pastry and cut it into rectangles that fit your baking dish, about 1-inch larger than the dish.
- Grease the inside of your baking dish with butter or cooking spray.
- Layer the puff pastry rectangles in your greased dishes, pressing them against the bottom and sides.
- In a mixing bowl, whisk the eggs and heavy cream together until blended. Add salt, pepper, thyme, and chives.
- Stir in most of the shredded cheese, saving some for topping.
- Pour the egg and cheese mixture carefully into the pastry-lined dishes, filling just below the rim.
- Top the filled pastry cases with the reserved cheese for a golden crust.
- Bake for 25-30 minutes until the tops are golden brown and the eggs are set.
- Let cool for 5-10 minutes before serving. Garnish with chopped fresh parsley.
